Best Chicken Piccata I ever made.
Definitely the best saute pan I've ever cooked with. I like that the sides are straight up so that they don't scorch when I turn heat up on gas burner. Also like that the pan is three ply throughout not just on the bottom. Again that helps with preventing scorching. The pan cooks evenly and it cleans up very easily. I don't know why some people say that their pans stick. I just heated pan, added oil, heated some more and then added chicken. Of course there is going to be the brown sticky bits, but they come right off when you wash the pan. I am careful to try not to scratch the pan as I figure that will make it less easy to clean. Right now it is just a glorious pan. I'm glad I bought it. The four quart try ply saute pan is just the right size for me. I was worried it would be too small, but it fits a package of chicken just fine. I didn't want to go bigger as I need to be able to lift loaded pan with one hand when I want to scrape out contents with a rubber scraper with the other hand. This pan is just on the verge of too heavy, but it is manageable.

A MUST HAVE!
I am not going to be shy about it. I LOVE this pan! I use this pan for all of my small roasting duties, such a quail, eye rounds, chickens, etc. It is a perfect size pan for a one-pot meal for two, or a protein and potatoes for 4. It is typical All-Clad quality and workmanship, and is basically a 4 qt sauce pan, but the real winner is the domed lid that allows you to cover larger items for gentler roasting or steaming. I do wish the dome was a bit taller so I could do larger chickens or a duck, but it is still an amazing addition to your kitchen.
