Hand-forged from premium quality high-carbon, no-stain German steel, Calphalon Contemporary Cutlery features a sleek, ergonomically contoured grip handle. A full-tang design provides better balance and superior strength. In addition, the name of each knife is etched into the end of its handle, so there's never a doubt which knife you're pulling out of the block.

Features:

Knife Construction: Crafted from high-carbon, no-stain German steel with Molybdenum and Vanadium. Tempered, heat-hardened to 1000C, HRC 54-56 (Hardness Rockwell "C" scale; a standard measurement of hardness). Fully tapered from cutting edge to spine and from tip to heel for superior strength.

Key Performance: Balance of knives, strength and durability of blades. Blades' ability to be honed and maintain its edge. Knife identification on butt of handle.

Blade: Fully forged blade. Full tang for balance and strength.

Bolster: One piece of metal for blade, bolster and tang.

Handle: Full tang - first ever ergonomically designed handle which shows the full tang. Crafted from fiberglass-reinforced polyresin - won't split, crack or harbor micro-organisms.

Rated 5 out of 5 by from Stunningly sharp; beautiful heft & ergonomics! Chose these over the competition & am very glad i did. Will care for them as mandated & will post later if rust or durability issues develops, but after 1 mo of use, one could not wish for a better set in every regard. If you are looking for mid/high grade, give Calphalon a shot over the German stuff & you wont be disappointed in the least. These are forged, not stamped, using high-hardness rated German steel in China. The steak knives, however, are Chinese stamped, & take a bit of beating in reviews... more of a beating than i think they deserve; they are fine (if not a bit aggressive @ serration) and they help keep the cost of this set reasonable. Again, its great to see this American co give the Germans a real run in this market segment. Ignore the reviewers who claim a cpl knives were left out of the set - they purposely leave open two of the wood block slots to accommodate a cpl of preexisting knives from your kitchen. Fantastic set; if they hold up, we are never looking back & will rec them to anyone. Unbelievably sharp - we now handle them w reverence - and your big kitchen prep jobs will be revolutionized! Rated 3 out of 5 by from Best ergonomics, decent edges, poor durability. These are some of the most comfortable knives in the market. Clever ergonomic handle design and well balanced. The lables on the back are genius, prevent extra wear on the edges and speed up your food prep times by letting you find the right tool; makes you wonder why others don't do the same. The steel type is not indicated, only that is of "German" origin. Is good enough to get a workable edge; no it does not last as long or is a sharp as a high end knife, but it is better than most other budget knifes and it gives you a taste of a "real" knife. The design problem is at the "neck" of the handle. While the tang runs full length, it is not "full width". The steel narrows down quite a bit in the bolster, the area between the handle and the heel. Combine that with a less than perfect stainless steel, and closed handle that collects moisture, and you have a knife with a shorter life. My worse ofender is my favorite, the 7" Santoku. It's already cracking at the center of the handle, the syntheric being pushed outside it's grooves. The 5" Santoku andt the 8" Chef's will be next, I can already feel the separation and lift at the handle. It is a real shame, if these knifes were durable they would be an almost ideal knife for a home Chef on a budget.

Rated 1 out of 5 by from RUST I recieved these as a wedding present in April, I was so excited to have a "nice" set, just about every single one of my knives are rusted, they do not sit in water or go on the dishwasher , hand wash everything , I thought it was just this set so I returned it and bought another set....and this set rust even worst than the first one!

Rated 2 out of 5 by from Rusty I received these as a wedding gift from my registry. I was disheartened to see how quickly they rust after just a few months of use. Since the steak knives have serrated parts on them, they can't be sharpened. I also found the serrated points on the steak knives would shred any proteins I used with them.

Rated 1 out of 5 by from Several rusted after only 2 months! These were a Christmas present and we made sure to be extremely careful with the handling of them. We hand wash them and never let them sit in the sink or in water. However, 10 of the knives already have several rust spots on them! The low quality knife set we had prior never rusted but this "high quality" knife set didn't even last 3 months!

Rated 5 out of 5 by from Best set ever!! I received this knife set as a Christmas present from my parents after they realized I was still using their old knife set they received as a wedding gift. Wood handles and all. But the blades had gotten so dull. After using these knives for 3 months I have been very impressed! I understand the "rust stains" everyone is talking about. I have left my dirty knives in the kitchen sink for about 3 days and they form faint rust spots. I just use the scrub side of my sponge and they rub right off. I have cut my thumb 1 time! I now make sure to pay attention when I'm hand washing my knives. I also try to hand dry them once I've finished cleaning them. Or if they sit they will get rust spots. But again, the spots scrub off. I have been very impressed with this set and have been thinking about getting a knife to fill the last slot on my block! I would recommend this set to EVERYONE!
