Rated 5 out of 5 by from Stainless Steel, NOT non-stick I love cooking with Calphalon stainless steel. They heat evenly and are great for cooking just about anything. I noticed a few reviews that mentioned that products were sticking to the pan. The salesperson did not tell me that the pans were non-stick and they do not have a non-stick coating. You will have to use a high temp cooking oil (which excludes olive oil) or a bit of water and the lid to keep your food from sticking. PS: PAM and other cooking sprays are not recommended for use with these pans. See the care and use instructions that come with set or individual pans.

Rated 3 out of 5 by from Calphalon Tri-Ply design changes Calphalon changed the design of the Tri-Ply lids. No explanation was given. No option was given to help previous Calphalon owners maintain matched appearance of our sets. Calphalon owners take pride in their cooking tools, and enjoy expanding their investments. Calphalon is an investment in quality cookware. Calphalon designs should not be less thoughtful than matching a handle on fine furniture or a collectible automobile. In fact, it should be easier. Sad to say Calphalon has offered no matching lids. Calphalon could offer to trade my old lids for new lids with a 50% discount. Perhaps that would cause them to think twice before changing an established design.

I own this set, along with an additional extra large covered pan, and I never find myself without something to cook a multi course meal in.  This cookware does not have a non-stick coating but is SUPER easy to clean.  I soak mine in HOT soapy water when I'm done using them and along with a scotch brite pad and very little effort, they are shining again.  My cookware is 10 years old and still look like new; NO KIDDING!

Rated 5 out of 5 by from Replaced a relic I bought this pan to replace my ancient 10 inch Club pan whose original non-stick surface was long gone , leaving just raw aluminum. Since I've purchased it, I've used the pan repeatedly for a wide range of recipies and applications (i.e. not just Omelettes). In a nutshell.. I'm very pleased with the pan's performance. Between its heft and the aluminum core, it heats quickly and extreemly evenly. Deglazing is also not a problem. The sloped sides make flipping a breeze, although I had to get used to the longer handle. When I purchase a piece of cookware, I look for performance, not particularly aesthetics. In summary, I have found this pan to be a great performer.

Rated 5 out of 5 by from Easy Clean Up I was setting up a summer cottage and didn't want to spend a lot of time scrubbing pots and pans.  I'm so glad I chose this set.  From remnants of steamed clams to fried bacon the pans wash off with ease.  Even when something burns due to my neglect, the pots and pans can easily be cleaned back to their original condition.  Easy clean up along with excellent heat convection on my glass stove top  make cooking at the cottage a positive experience.  Thanks Calphalon!

Rated 5 out of 5 by from Love the Pan! I have had this pan for a few months now and love it. While this SS pan is not nonstick, the satin finish requires very little fat. It heats up quickly and evenly. I can only think the person who complained about the horrible clean-up cooked food at too high of a temperature. Like another reviewer, I deglaze the pan with a little hot water while still warm. Even when it needs a little scrubbing, I use Barkeeper's Friend, and it cleans up beautifully.

Rated 5 out of 5 by from Good, solid pan I have been using my 10" omelette pan several times a week for 8 years now, and I have no complaints. Heats evenly, doesn't scorch my food, cleans very well with Bon Ami. It is easy to prevent food from sticking on this pan, unlike thinner pans I have, by getting it hot and adding a cold fat. This is a substantial line of cookware and definitely my favorite.

Rated 3 out of 5 by from Scrambled eggs stuck I've used this pan once and was somewhat disappointed. After following the heating instructions, and waiting for the butter to melt, I added scrambled eggs and cooked them over medium heat on a gas stove. The eggs stuck to the bottom of the pan, but cleaned up fairly easily after soaking for five minutes. Not non-stick with proper preheating as advertised. I've been cooking for 30+ years and know how to use stainless steel pans so this was a disappointment. I was going to buy several sets for my children, but not now.
